Now, a bit more about me. I decided to take the plunge into making this blog to document my journey into the vegetarian lifestyle and its many adventures. Since becoming a vegetarian last year, I have discovered many ways to make a plant-based lifestyle fulfilling and joyful. Yes, you can be a vegetarian and still enjoy plenty of restaurants, cook amazing food and well, have fun. So, whether you are a part-time omnivore, veggie-curious, Meatless Monday’s enthusiast, or simply want to know more about how to incorporate more plant-based sources, my adventures will surely give you more insight into the veg world. There is such thing as a veggie-fabu-life and I am here to document each step of it!

The Story Behind VeggieFabuLife

After much thought throughout the years over vegetarianism and sustainable eating, one summer day in 2014 I told my husband: “September 1rst I’m becoming a vegetarian!”. He was certainly not surprised because I have never been much of meat eater since being diagnosed years ago with stomach issues, so he just smiled back and said: “I stand behind any decision you make”, so I just did it (Nike pun intended!). The months that passed after taking the veggie plunge, were filled with funny, puzzling, uncomfortable and plain hilarious stories about the vegetarian path. From the time I asked my dad if the family cruise that we were taking I was going to be able to find vegetarian alternatives, and his response was: “Yes! You can eat fish!” my puzzled faced could not believe what I was hearing and when I told him that vegetarians do not eat fish, his brilliant response was: “Well, then you can have a lot of salad!.” To my first time cooking tofu, which was a real treat and now I’m a tofu convert! To the time I traveled back home to Puerto Rico during Christmas (pork season in the island!) and people had no idea what to give me for dinner. To discovering that you can have a vegetarian fine dining experience and that you can certainly be a foodie and still cook fabulous plan-based dishes. This is my journey so far and I am excited for the adventures to come.
